Sinigang Na Bangus (Milkfish in Sour Broth)
Yield: 4 Servings

Ingredients
1 1/2 pounds Anjo Farms Bonuan Bangus (milkfish)
1 can Banana heart, drained(14 oz) cut diagonally in half
2 cups Green beans
2 cups Water
3 medium Tomatoes, sliced
1 cup Spinach leaves (or cabbage, mustard greens or watercress)
1 medium Onion, sliced
6 Pods green sampaloc (tamarind) [available as powdered packages]
1 teaspoon Salt
1 tablespoon Patis (fish sauce)

Instructions:
1. Slice fish and cut into 4-6 pieces. Salt all over.
2. Boil water and tamarind pods until pods are tender. Remove tamarind, mash and strain back into the boiling water. (optional)
3. Add tomatoes, onions and green beans to boiling mixture and cook 15 minutes or until vegetables are almost cooked. Add fish, banana hearts, and patis. Bring to a boil. Lower heat and simmer 3-5 minutes. Remove from heat, add spinach leaves, and let stand for 5 minutes.
4. Serve with bagoong or patis (fish sauce).

Preparation time: 10 minutes Aging time: 1-2 days Serves: 4

Deep Fried Bangus
Yield: 1 Servings

Ingredients
4 cloves garlic minced.
1/4 cup vinegar or lemon juice.
1/4 cup soy sauce
1 tsp salt
1/2 tsp fresh ground black pepper.
4 medium sized Anjo Farms Bonuan Bangus (Butterflied)
Proportional oil for frying.

Instructions:
(Fish Preparation)
1. Mix all ingridients.
2. Soak butterflied bangus in mixture for 30 minutes, or for best result, soak overnight.
3. Pat dry with papper towel, then deep fry or pan fry if you don't have a deep fryer.
4. Serve with fried rice or plain white rice.

Inihaw na Bangus
Yield: 4 Servings

Ingredients:

1 whole Anjo Farms Bonuan Bangus (about 2 lbs)
-or white; fish, dressed
2 sl lemon
1 1/2 ts salt
1/8 ts pepper
1/2 c tomatoes, chopped
1/4 c onions, chopped
2 green onions, chopped

Instructions:

1. With sharp knife, cut along back of the fish and remove the backbo Rub fish inside and out with lemon slices, sprinkle with salt and pepper.
2. Mix tomatoes, onions and green onions. Stuff fish with the mixtur through its back opening. Wrap in foil and grill over live coals unti done. (about 15 minutes on each side).
3. Serve with lemon wedges or with a lemon juice and patis (fish sauc dip.

Lumpia(Bangus)
Yield: 4 Servings
Ingredients:
2 med. sized Anjo Farms Bonuan Bangus
1 sm. onion
1 box raisins
Lard for frying
3 sm. tomatoes
1 tsp. pounded garlic
25 big lumpia wrappers
Salt and pepper to taste

Instructions:
1. Clean the fish and parboil
2. Remove the flesh from the bones and set aside.
3. Cut tomatoes into small pieces and cut the onions lengthwise.
4. Saute garlic, onions, and tomatoes.
5. Add bangus meat and raisins i lumpia wrapper and fry in deep hot fat until golden brown.
6. Drain in absorbent paper and serve hot with sweet and sour cream.
